Living Life Well – Cape Cod Carrot Cake™


2 cups flour

2 tsp. cinnamon

2 cups sugar

1 tsp. vanilla

1 ½ cup vegetable oil

2 cups finely grated carrots

1 tbsp.  baking soda

1 tsp. salt

1 cup shredded coconut

1 cup chopped walnuts

3 fresh eggs

1 cup well-drained crushed pineapple


Sift flour, cinnamon, soda, and salt together.  Set aside.  Beat sugar, oil, eggs with electric mixer until very well blended.  Gradually add flour mixture, and then fold in carrots, pineapple, coconut, walnuts, and vanilla.  Bake in a greased and floured spring form pan at 350° for one hour or until done.  To check if done, insert clean, dry toothpick.  If should come out clean.  Allow to cool on cooling rack.  When cool, frost with Cape Cod Cream Cheese Frosting™.

*Hint: Cut out parchment paper to line the bottom of spring form pan.  This will give you a clean release when removing from the pan and onto a cake trestle.
